Roaster’s Note

We chose to roast this coffee as a bright-medium roast to preserve the delicate, high-grown character that makes Yirgacheffe so special. A lighter touch on the roast lets the coffee's natural acidity and fruit-forward complexity shine and adds a balance to bring out the coffee's full character.

Our roots will always be connected to our family farm, Finca Terrerito, in Honduras, and the community that makes our coffee journey possible. Most of our coffees are grown, harvested, and processed right there on our own land, it's the heart of everything we do. But every so often, we love the opportunity to step outside our own fields and highlight an exceptional coffee from another origin around the world. This one is a celebration of coffee's birthplace: Ethiopia, where generations of farmers have cultivated unique heirloom varietals that helped shape the world of specialty coffee as we know it today.

Sourced through our partners at KANYA Coffee, this coffee comes from the Dumerso microregion of Yirgacheffe, grown between 1,900–2,100 meters in elevation. These are conditions that create exceptional clarity and complexity in the cup. It's a washed Ethiopian Heirloom Arabica, carefully processed to highlight the bright, delicate qualities Yirgacheffe is known for.

The result is a bright-medium roast that opens with vibrant grapefruit notes, transitions into the warm sweetness of peach cobbler, and finishes with the rich, lingering depth of dates. Clean, complex, and fruit-forward, this coffee is a true expression of its origin.

We recommend brewing this Ethiopia Yirgacheffe in a V60 or Chemex as the thinner filter allows the coffee's more delicate notes to shine through. For a fun and refreshing cup, try this recipe:

  • 250ml water at 203°F
  • 1:16.5 ratio

Understanding Grind Types

Whole Bean

Maximize your coffee experience by grinding your own whole beans. The flexibility of a grinder allows you to grind fresh and specifically for your brewing device. It's one extra step, but trust us, it is so worth it ;)

Best For: All Methods

Regular/Keurig (Ground)

This fine-medium grind is perfect for drip machines, keurigs, or aeropresses. It is the most commonly used size, making it a safe option when gifting coffee to a friend or if you are unsure of what grind type to get.

Best For: Drip Machines, Keurig Machines, Aeropress

Chemex (Ground)

For Chemex enthusiasts, the coffee grind is coarser compared to other pour over options. This grind size is ideal due to thicker Chemex filters, which slow down water during extraction.

Best For: Chemex

Pour Over (Ground)

This medium-coarse grind is ideal for fans of pour overs like the V60. For optimal results, we recommend using with paper filters.

Best For: Pour Overs (Not Chemex)

French Press (Ground)

Perfect for any submersion brewing methods such as the french press or cold brew. This extra coarse grind will be the perfect grind for you!

Espresso (Ground)

Ideal if you have an espresso machine but not recommended! If you are looking for espresso fine coffee, please take note that we recommend you purchase an espresso grinder and do not recommend purchasing coffee ground for espresso from us. Although we will do it, calibration is key to a perfect shot of 'spro. There are over 20 options in espresso finely ground coffee and we'll grind based on what works best on our espresso machine for the day.
